The idea behind the Pot of Gold is simple - think ahead! We all compromise on eating enough vegetables from time to time because we're simply too tired to take the time to put together a healthful meal. What's the most time consuming part of cooking with vegetables? Chopping them up! Which is what makes the Pot of Gold so valuable.

Make dinner through the week nice and easy by chopping all of your vegetables on Sundays (or whatever days of the week you have off from work) and storing them in a big mason jar. Here are a few different combos you can try for different meals:

Stir Fry

  • Onion
  • Pea Pods
  • Bell Pepper (any color)
  • Broccolli
  • Garlic

Soup Mix

  • Onion
  • Celery
  • Carrot
  • Garlic

General Use (veggie up any meal!)

  • Onion
  • Bell Pepper
  • Garlic
  • Sweet Potato
  • Brussels Sprouts
  • Kale
